Dr. Udeshi began her career as a lecturer and later went into research. “I worked in an international research unit in Pune. I was so much into the subject, that after post graduation I did my M Phil and stood first in Maharashtra. Then I went on to do my Ph.D. I worked with Lilavati Hospital in their catering department and after that there were a lot of offers from pharmaceutical companies since nutrition as a subject was picking up.” Besides this, Dr. Udeshi also worked on the nutritional aspect of recipes for books with celeb chef Sanjeev Kapoor. What is encouraging, according to Dr. Udeshi is that the Indian traditional diet is good. “What I have understood is that the science of food should not change - the poetry should not be lost. Food is very interesting – one should work at making things better without making a diet boring.” With her family’s encouragement all aspects of food became interesting.” My kitchen became my laboratory and I experimented a lot with food.” Now as a dietician, her role is, at times, more that of a counselor. “It is very important to encourage clients to change their lifestyle and adopt healthy food habits.
